To grow fast, it’s best to create YouTube videos in a niche which doesn’t have a lot of competition. Other answers have focused on creating content in popular categories on YouTube, but that won’t necessarily lead to fast growth, because those categories are already saturated with existing content.

Instead, I’d suggest focusing on areas where there’s a lot of demand but not too many competing videos. As an example, I launched a YouTube channel which reviews kids’ products. It’s an area I know well, and it’s relatively easy to produce videos. Not too many people review these kinds of products, so each of my videos had averaged around 2,000 views.
It might be harder to monetize this kind of channel at first, but once you grow it to the point of monetization, you can always pivot to a more lucrative type of video. For example, I could pivot my kids’ products channel to talking about other things parents might care about which have higher opportunities for monetization, like travel for families, investment and savings advice for parents, insurance that parents need, etc.
